Shojin ryori (vegetarian food) has a history of 1,250 years and has been handed down from generation to generation at Rinnoji Temple on Nikko Mountain.
It was developed as a source of protein for ascetic monks (mountain ascetics) in the olden days.
It is a natural food made from only vegetable ingredients, including soup stock, and is the root of Japanese cuisine.
